Valentine Scones

Happy winter Wednesday!

I want to thank all of you who gave me advice on how to fix my vintage chandelier! I'm weighing my options, and I will definitely share with you what route I decide to take with it. You guys are the best!

Last week, some friends stayed overnight on our living room sectional. Every night since then, my two youngest kids have thought it was great fun to sleep down here on the sectional too!

I thought it might be good for you to see a "real" morning over here. Pillows and blankets still on the sofa...a school book that didn't quite make it all the way back on the shelf...and why does my world map look like it's falling off of the wall?

Oh well, let's just carry on with something yummy and I'll deal with that stuff later :)

You know I don't do a lot of food posts, but with this cold weather I'm looking for extra reasons to turn the oven on and keep things feeling cozy over here.

Today I'm going to share my basic scone recipe with you, and show you how I tweaked them a bit for a fun, less sweet Valentine treat.

Ingredients

2 cups flour
2 T. sugar
3 tsp baking powder
1/2 tsp salt
1/3 cup cold butter, cut in pieces
1 egg, beaten
3/4 cup milk

Preheat oven to 425

In a large bowl, sift together the flour, sugar, baking powder and salt.

Add the pieces of butter to the flour mixture and cut in with a pastry cutter. If you don't have a pastry cutter, using two forks to incorporate the butter into the flour mixture works okay, too.
Sometimes I even use my fingers to finish incorporating it.

When I was younger, I used to read a recipe and think I couldn't make it if I didn't have the tools they listed, or the exact ingredients. Silly! Just use what you have, and it will be fine. Sometimes, if you tweak a recipe with what you have on hand, it comes out even better : )

Okay, back to business...

Incorporate the butter into the flour until it resembles coarse cornmeal.

Add the egg and most of the milk, reserving some. Stir quickly and lightly, until no flour shows. Add more milk if needed to form a soft dough.

Turn the dough onto a floured surface and knead gently, about 15 times.

{Normally, at this point I would divide the dough in half. Roll each half into a ball, then press into a circle shape about 1/2" thick. Cut each circle into 8 wedges and bake}

Today I'm rolling the entire dough out, approximately 1/2" thick and cutting out the scones with a heart shaped cookie cutter. I was able to get 3 dozen scones from this batch.

Is this too much "real" today?
Yes, this is my one and only baking sheet. It's not pretty, but it has served it's purpose for a long time.

Now place your scones on a lovely, new-looking greased cookie sheet, or use parchment or foil on your old worn-looking pan, as I am today : )

Bake for approximately 12 minutes, until golden brown.

Now, these are absolutely delicious right out of the oven, with nothing but butter {my kids even like them with nothing on them}

But just to pretty them up a bit, I lightly dusted them with powdered sugar.

Just seems a little more festive, don't you think?

We are having ours with butter and strawberry jam, but these are so yummy served with any fruit spread. Lemon curd is another favorite of ours with these, but today we're going for the pink-y reds of Valentine's Day!

A delicious, "less sweet" Valentine treat, perfect with hot tea or coffee.

We are having some snow and cold temps here in Western Colorado this week, but nothing compared to some of the scary reports I've seen elsewhere in the country.

Stay safe and cozy, friends!

See you soon-

Jeanette

Easy Chicken and Biscuits

As a busy single mom of three kids, it can sometimes be challenging to come up with some variety in the meals that I prepare for my family. Can any of you relate?

With kids ranging in age from 6 to 16, it's not always easy to find recipes that everyone will enjoy.

With the help of The Wisest Kid in the Whole World™, Campbell’s makes it simple to find delicious meals that will please even the pickiest eaters. Just visit their recipe site for tons of meal inspiration!

For more than 144 years {that's a long time!} Campbell Soup Company has been making meals fun and delicious for our families.
If you're looking for yummy and quick meal ideas, just visit WisestKid.com for recipes your kids will be crazy about.

Fun fact: Did you know that every can of Campbell's Chicken Noodle Soup has 32 feet of noodles?? That's a lot of slurping!

Well, you know...if your kids are into that sort of thing ;)

At this time of year we are naturally craving warm and satisfying meals like chicken and biscuits.

Starting with Campbell's Cream of Chicken soup and adding a few simple ingredients, it's easy to create a hearty, flavorful meal that doesn't take a lot of time, and my whole family loves. I'd love to share my recipe with you!

Easy Chicken & Biscuits

Ingredients:

4 cups of cooked chicken, cut in pieces {homemade or pre-cooked from the grocery store}
2 cans of Campbell's Cream of Chicken Soup
1 can of milk
2 cups of frozen mixed vegetables, thawed {I used peas and carrots today, but use whatever variety your family likes!}
1 can of "jumbo" refrigerated biscuits

Directions:

Preheat your oven to 350 degrees.

In a large bowl, whisk together 2 cans of Campbell's Cream of Chicken soup with 1 can of milk, until smooth.

Add the mixed vegetables and chicken and stir until well combined.
Spread the mixture in a 9 x 12 baking pan.

Place the 8 biscuits on top of the chicken mixture and bake for approximately 18-20 minutes or until the chicken mixture is bubbly and the biscuits are browned and baked through.

It's as easy as that! I served the chicken and biscuits with a simple green salad, and we like to put a little butter on top of our biscuits.

The little kids and the teenager love it. Mission accomplished!

On a chilly Fall or Winter evening-THIS is comfort food. Yum!

If you’re cooking dinner, Campbell gives you fresh ideas to please the tastes of your entire family. Look for new, kid-friendly recipes like Mini Chicken Pot Pies and fun new ways for your kids to enjoy tomato soup.

Whether you're looking for fresh twists on classic favorites or looking for totally new recipes, Campbellskitchen.com will give you inspiration just when you need it!

I hope you're having a yummy week, friends!

Easy and Delicious Cake Mix Cookies

If you want fresh-baked cookies fast, it doesn't get much simpler than this.
Preheat oven to 350 degrees. In a large bowl, beat two eggs with a fork. Add 1/3 cup oil (or melted butter) and mix well. Add one package of cake mix, whatever flavor you like (I used yellow cake for these). Stir with a spoon until well mixed. Drop by teaspoonfuls onto an ungreased baking sheet and bake for 10-15 minutes. Cool (or not) on a wire rack and enjoy!

Soft, delicious, yummy : )

Savoring Summer

Summer is slipping on by, and we aren't ready to let it go....sigh.

We're grabbin' hold of some sweet summer memories with a cookie and lemonade picnic at the river park.

Pretty vintage glasses and linens always make things feel a little more special.

We stopped on the way to the park to cut some wild Sunflowers
on the side of the road.

Lots of space to run after we finish our cookies : )

The frogs were the highlight of the afternoon for my critter-loving 8 year old.

~Wishing you all the beautiful summer dreams you can grab hold of, my friends~
